Easy-to-make sweet chili garlic shrimp

Hey there folks, are you hungry or what?

Today we’re gonna be making “sweet chili garlic shrimp,” another dish that I happened upon recently that allowed me to use some giant Argentine shrimp that our good friend Janice Williamson brought us last week. The shrimp is nicely cooked and generously coated with spicy, sticky sweet, and savory sauce, with a nice tint of lime juice. This recipe takes only 15 minutes and this is probably the best shrimp recipe you can make in a jiffy. It really is finger-lickin’ good!

For this recipe you’ll need the following ingredients:

  • 10 oz. shelled and deveined shrimp
  • Salt
  • Black Pepper
  • 2 tablespoons oil
  • 3 cloves garlic, minced

For the sauce:

  • 3 tablespoons Thai sweet chili sauce
  • 1 heaping teaspoon chili garlic sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sugar
  • Pinch of salt

To prepare this, first you’re gonna rinse and pat dry the shrimp and season with salt and black pepper.

Heat up your cast iron skillet and add one tablespoon of oil. Pan-sear the shrimp on both sides until slightly brown. Remove from the skillet.

Next, you’re gonna clean the skillet (optional step) and reheat it with the remaining tablespoon of oil. Sauté the garlic until aromatic or until slightly browned. Add the shrimp and follow with the sauce. Stir to combine well. If you want, you can garnish with cilantro or parsley leaves.

As you can see above, I added some vegetables, oysters and crackers to mine. Everybody loved it, and this is definitely something I’m gonna be doing more of. Until next time...cheers!
